The sweetcorn fritters in the Riverford farm cook book get my vote at the moment and seem to be endlessly popular, but what are you cooking?

Sweetcorn Leek and Chicken Bake

250g penne pasta
1/2 cup light cream cheese
2 sweetcorn kernels stripped
1 large leek sliced
leftover chicken chopped
half cup grated tasty cheese
Method

Preheat oven to 180°C.

Cook pasta in a large saucepan of boiling salted water, following packet directions, until just tender, al dente. Drain pasta,

Cook leeks in a little water till just tender, reserve third to half cup of leek water

Return pasta to saucepan with cream cheese, corn, leeks and chicken.and add enough leek water to desired creamy consistency

Cook, stirring, over gentle heat until cheese has melted and ingredients are combined.

Season with salt and pepper.
Spoon mixture into an ovenproof dish. Sprinkle with cheese.

Cover with foil and bake for 30 minutes.

Remove cover for another 10 mins or until top is golden.
