A few things I have greatly valued putting in my kitchen are wide plate stacking drawers next to the dishwasher and opposite the dishwasher on an island we put  wide saucepan drawers.  Much easier to get plates and saucepans out of drawers than reaching into cupboards and handily near to the dishwasher when unstacking it.  Also we had a chimney breast in the kitchen which we enlarged to make a large larder cupboard - I love only have one place to go to to find food.  All my packets and tins, bread and cakes are kept in it plus two pull out basket drawers at the bottom for onions, potatoes.

We devoted a drawer to spices as well, they lie slightly recumbant on racks in rows in the drawer and this is right next to the cooker.   We didn't buy any fancy infills for either the plates or the spices, the carpenter involved on the job concocted infills that would function to support the contents.

Re:  Sink size, we only had room for one but I made sure it could take a large roasting tin lying flat for soaking purposes.

Also check that if you keep bottles of olive oil etc in cupboards then the shelf height is the right height to take the tallest of bottles.
