I love kidney beans but sometimes they need spicing up a bit, this is an age old indian recipe that can be use with runner beans, french beans or cabbage, its lovey with curries as its light and I think would complements the heavier meat dishes (if you're not a veggie, I am).
Beans Thoran
4oz Runner/French beans chopped diagonally quite thin 1/2 Onion chopped finely 1 green Chilli chopped 1 tbs desicated coconut 1 tsp mustard seeds Curry leaves salt to taste Oil for frying
Heat a little oil in a pan, add mustard and allow to splutter and then curry leaves and green chillies. Add chopped onions and green beans and cook gently for a couple of mins, finally add coconut and cook on low heat until tender. Yummy
